Tubers

​Potatoes are often the hidden crop of the garden. “What are those beautiful flowers?” They are potatoes, hidden in the ground. Potatoes require hilling to be successful and structures built from strawbales or wood help boost yields.
 
Spacing & Yield

On 30” and 4’ beds, 2 rows of Potatoes can be planted, with 10” spaced between each plant.
 
Potatoes yield about 3-5 pounds per pound planted. Typically about half a pound planted per foot.

“Russet potatoes are large, long, and cylindrical with the appearance of being slightly flattened. The fine, sandpaper-textured, outer skin is brown with shallow eyes. Its inner flesh is white, firm, and floury and when cooked, becomes fluffy and light with a smooth, buttery flavor.”

Mid-Season (85-90 Days)

“Yukon Gold potatoes are round to oblong and slightly flattened tubers. The smooth, golden yellow-brown skin is eye free and is speckled with brown spots. The inner flesh is moist, yellow and waxy. When cooked, the Yukon Gold takes on a creamy consistency with a rich, buttery flavor.”

“Grow heavy-yields of drought-resistant heirloom potatoes that have excellent storage ability and are great for steaming, boiling, mashing or baking. This white-flesh, buff-skin potato has a flat-round shape and matures late in the season.”
